Curious…How’d that timing work out Brian? I hope it was good.
I learned a few things. One, my oven runs a bit hot so the bird was done by 11 AM. Two, not to take my sister-in-law seriously when she says she will come by early to make the mashed potatoes.
Consequently, we are eating an hour later. I had to nurture the turkey for 2 hours not to overcook it or let it cool off too much.
The result? I pulled it off, it was really good. One of the better turkeys in recent memory.

Oh boy! Looks like Mommas chicken and dumplings. Now I need some.
For the first time ever, We did a fresh never frozen bird from a family farm in PA. No additives or hormones, etc, they even grow the feed for their turkeys on their farm. It was excellent. No more frozen birds! As usual I wrapped it tightly in foil with broth and a beer and cooked it on high in the countertop roaster… no knife needed as it just fell off the bone (only downfall to this method is the skin doesn’t brown and crisp). Used a pair of tongs to pick off a breast, a leg and some thigh meat while it was still hot for the dinner table. Forked off chunks during dinner for plating. Made homemade dressing/stuffing for the first time in my life, it turned out really good, the green bean casserole turned out good. Also a first, my better half insisted on purple sweet potatoes (I’d never heard of that) which we boiled and mashed, that was really good too. Had a nice lunch today after the inspection. Hmm this is making me hungry.

Well, I enjoyed Thanksgiving leftovers for brunch and another helping around 3:30 today so I’m happy. Lenny liked pieces of heart and liver over the last couple o’ days so he’s grinnin’. It was just my bride and me this year and we’re content and thankful.
We had a bird like Dave’s and my sausage sage stuffing out of the bird is great. The pumpkin and pecan pie are fine.
Yep, fat and happy of at our house.
40 people at my brother in laws house, so you know how ours was…
But no fights and food was good…
