Odd Installation for tankless water heater

100% It’s an approved material for the potable water system. That is one of the requirements for the pressure relief valve discharge piping.

It’s a good thing the water heater is only set to 120°F and the relief valve is only for pressure and not temperature. Do you know anything about tankless water heaters?

Do you know why the manufacturer of tankless water heaters do not require a temperature relief valve?

If you want to get 212°F water through a tankless water heater it will probably need to be about a 450,000 BTU tankless water heater.
