Here's a couple more terms to add to your list: (From Architectural Graphic Standards, 5th & 7th Editions)
Hip (ridge) Starter - (Cap tile with circular disc on underside to cover end)
Circular Cover Starter - (Cap tile with dome configuration on one end)
Actually, Russel was correct that plugs of concrete/mortar were common in many older applications.
Not knowing what was originally used, the term end cap may be the most easily understood description for us to use for the client.
