Here is a quick and easy “Peanut Butter Cookies” recipe we use.

2 cup peanut butter
2 cup white sugar
2 eggs

Preheat the oven to 350°.

Line the baking sheets with parchment paper.

Mix peanut butter, white sugar, and eggs in a medium bowl until smooth.

Roll the mixture into 1-inch balls and place them 1 inch apart on the ungreased baking sheets, Flatten each with a fork, making a criss-cross pattern.

Bake in the preheated oven until cookies are just barely brown on the bottoms, about 6 to 8 minutes.

Cool on the baking sheets briefly, before removing to a wire rack to cool completely.

Makes 2 dozen cookies.

Don’t have any cookie recipes anymore but found this one. They are kind of a cross between cinnamon rolls and sticky buns.

Not a “Cookie” recipe, but more of a “Shortbread Bar”, which in my opinion beats the heck out of ordinary cookies.
This recipe has been a family favorite since at least the '70s when it was handed down from my Godmother…
