Christmas dinner this year?

Thought I would do Prime Rib
Baked potatoes
Butternut squash or Brussels sprouts/ cauliflower roasted in olive oil
Popovers

Then I thought maybe a smoked brisket and instead of popovers I do corn bread

Haagen Dazs later.

Anyone else planning a good meal?

But then again, we are driving up to the Aroostook County in Northern Maine to spend Christmas with the Grand kids.
We also have relatives in Madawaska near the Border.
We will be happy with whatever is on the table. ;):slight_smile:

Too much hassle to clean & fire up the smoker so I cheat!

Crock Pot BBQ Beef Brisket

Sounds good, and easy. Since I use an electric smoker its not a big deal to get a brisket going. It would be my first one.

Hmmm I’m thinking ham.

Starting with a winter soup.

Roasted Turkey stuffed with clementines and apple. Roasted sausages wrapped in bacon. Individual stuffing balls (with pork & beef sausage meat and roasted chestnuts)
Roasted sprouts with garlic, almonds and maple syrup. Roasted parsnips. Dart-night potatoes (these are approx. 1.5" x 1.5" peeled and cut potatoes par boiled in the microwave (10 minutes) and roasted in duck fat at 600 degrees on the grill outside - another 10 minutes and they are done) Green beans with wild rice and goats cheese crumbles and Baked White Cabbage with Campbell’s Condensed Mushroom soup (undiluted) with Cranberry Maple sauce and a gravy made from the Turkey Juices.

Finish that off with a little portion of home-made Olde English Christmas Pudding with Brandy flambe and some home-made mince pies and whipped cream.

Then to stave off the heart attack a nice long walk along the side of the Niagara River.

Screw planning a meal, we’re just heading to your place for Christmas! :stuck_out_tongue:

Heading 8 hours north to visit both sides of the families. Meals unknown, but delicious for sure!

I am putting a ham from this years pig in the smoker. Then its just the regular stuff, smoked jalapeno poppers, garlic-parm mashed potatoes, Roasted garlic Brussel sprouts in a red wine reduction, pork stuffing, carrot and turnip mashed and homemade buns.

Something special happens when you roast Brussels sprout. Same with cauliflower.

Never tried a wine reduction sauce so I’m going to look that one up.
