I have an AC with a label saying max size 30 amp. The shutoff says 60 AMP so I was going to call it out for sure. My question is, does this apply to the breaker box as well or just here?

The disconnect is not the fuse or the OCPD for the circuit. The disconnect is just there for servicing the unit. The breaker at the panel is what protects the circuit.

If you look closely it is labeled non-fused. Even if this switch did contain on OCPD like a fuse or a circuit breaker it can be larger than the MaxOCPD marked on the unit if the OCPD at the origin of the circuit is properly sized in this case a maximum of 30 amps.
