If so, do you typically add the sales tax on to your fee, or do you build it in to the fee?

I am not a NY resident. However, you can download the manual to sales tax in NY from the following link:

I don't believe that Home Inspections are a taxable item. However, I would make sure if I were you.

I finally found the answer in this advisory opinion:

Which states that home inspections are
not subject to sales tax in New York.
