like i said i use propane for heat and probably cook at a higher temp quicker
do not make anyone sick
please add wood it adds flavor

I always add wood. and dried herbs and citrus peels, etc… Sometimes soaked sometimes dry. I love jack Danials barrels they are a great flavor enhancer.all kinds of stuff. I just use electric to maintain a steady temp.
It is all about the things I make smoke that makes the food good.
and consistent temps.
I got it down.
I just suck at brisket and corned beef.
I will get it someday.
I am better at low and slow because I can keep the temp just under done for many hrs.

i can cook smoke from frozen to mouth watering in less then 10 hours
all moist and tender
