I have never seen this before and I was hoping someone could shed some light as to why a roof would be designed this way as it was clearly an intentional and repeated decision.
What is the name of this type of structure and what is its purpose?
I can only guess that this is not the main structural member and is only holding on the roof material.

This type of roof framing is used on modular homes. It is not a typical truss system. The hinges are there for erecting the roof after setting the module in place. You should have seen two ridge plates and two center beams at the attic floor.
